Manchego, a flavorful sheep's milk cheese, is undoubtedly Spain's most famous cheese. When young, Manchego has a mild, creamy and sweet aroma. The taste is sweet, salty and slightly nutty. The texture is smooth and creamy, and a little bit granular. This becomes more pronounced as it matures and the flavor becomes sharper. It is perfect on crusty breads, for snacks, used in sandwiches, or as an appetizer in tapas.  ​
